Small seeds used whole for tempering/pickling or crushed to produce mustard oil and paste. Rich in healthy fats and produces a sharp, pungent flavor when crushed due to volatile compounds.

Yellow Mustard (high demand), Black/Brown Mustard, and Mustard Oilcake (used for animal feed).
